Hi there… Hope you survived the Swedish crayfish party? The crayfish parties are a blast but can be a bit hard on the head the day after. Anyhow, if you have some crayfish left and want to try something else then I recommend making a crayfish salad. It’s perfect for a light lunch or starter, served on toasted bread, or you can serve it on fresh mixed salad with some (cold) boiled potatoes.

This is what you need:

  • 200 gr peeled and cooked crayfish
  • 1 small red onion
  • 1/4 red bell pepper
  • 1/4 green bell pepper
  • 5 cherry tomatoes
  • 1 spring onion
  • olive oil
  • lemon juice
  • white wine vinegar
  • pepper and salt

This is how:

Cut the onion and bell pepper in thin slices. Cut the cherry tomatoes in two, remove the seeds and cut each half in 4 parts.
For the dressing combine the oil and vinegar in a small bowl. Add a splash of lemon juice and mix the three. Add pepper and salt to taste.

Combine the crayfish with the vegetables. Add the dressing. Sprinkle a few rings of spring onion on top and you are done.

Serve with some fresh salad or on buttered toast.
